If you go to the AKC you will be able to pull up the breed standard for your dog. Part of that standard will tell you how they are to be groomed to be shown. Your groomer may be getting overly enthusiastic trying to tidy up your dog, or they may have to remove more coat than they would like to get mats out. Take a copy of the breed standard with you the next time you take your dog to the groomer and explain to them that this is what you would like your dog to look like. They will let you know if there is any reason why they can not, or do not want to groom your dog this way. Just be prepared that if dog is very matted the groomer may refuse to demat him/her. It is a very time consuming proceedure and quite frankly it hurts the dog. At the very least the will charge extra if the dog is matted.
