Hi. I hope everyone that has garden's are having the luck I am having...My garden is booming...the only problem....my zucchini is gone wild..I need some recipe's for cooking zucchini...if anyone has some great recipe's they would like to share I would really appreciate it. So would my husband and kids....they are tired of the the zucchini bake I do now... Zucchini cut up, yellow Squash cut up layer zucchini and squash with mozzarella cheese and pizza sauce. bake in over 350 for about 30-40 minutes....YUMMY...you can also add cut up chicken to recipe for a complete meal.... So, That is the only recipe I know...does anyone else have any ideas? Thanks....
send me some! I love that stuff... anyway my mom used to sneak zucchini into cookies and bread all the time. ( I think it was just like baking chocolate chip cookies but instead of chips it was shredded zucchini) and my husbands granny puts shredded zucchini into pancakes. Its soo good. You eat the pancakes with butter instead of syrup. last time we had them we put salt and pepper on them and chopped up tomatoes. Otherwise I just fry the stuff with onions. You can always cut it up into very small peices and bake it into cassaroles and hotdishes. then you feed it to the kids and they never know...my mom did that all the time
I love it grilled with just a little olive oil and lemon pepper. I also coat with egg, cracker crumbs and pepper and fry on top of the stove. You can also make lasagna with it instead of noodles. Sounds very similar to what you do now.
Also, make a casserole of cut up zucchini, stove stop, chicken and crushed tomato and bake.
3 medium zucchini 3 medium yellow squash 1 cup toasted bread crumbs 1 cup shredded Parmesan 1/3 cup minced Vidalia onion 1 large egg, lightly beaten 1 1/2 teaspoons dried Italian seasoning 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1/2 cup (1 stick) butter 1 jar store-bought marinara sauce
Grate zucchini and squash with a fine grater. Press between paper towels to remove excess moisture. In a medium bowl, combine grated zucchini and squash and next 7 ingredients. Shape mixture into 2-inch patties, pressing together firmly.
In a large skillet, melt butter over medium heat. Cook squash and zucchini cakes 3 to 4 minutes per side or until lightly browned.
Place onto serving platter and serve with marinara sauce.
ALSO ANOTHER ONE OF MY FAVORITE:
3 cups cooked squash or zucchini 1 can cream of mushroom or chicken soup 8 oz pepperigde farm herb bread crumbs 1 grated carrot 1 medium onion chopped 1 stk melted butter 1 cup shredded chedder cheese
combine all ingredients and bake at 325 for 45mins to 1 hour ungreased uncovered 9x13 pan
