I have seen some large breeds do it, most don't do perfessionally though. The toughest part is getting them to go through the tunnels. Most tunnels are to small, and the dog has to bend down. It can be scary experiance for them. Otherwise they are great at it.
Why not go to the shelter and rescue a dog's life? My dog is a rescue and does agility just fine. He is 83.1 lbs catahoula. So large dogs can do it just train them well. Put them in puppy agility and they dont think anything is weird about the tunnel

Parson/Jack Russell's are great agility dogs. So are Pappions. There is a Yahoo Group listing for Agility dog prospects looking for homes. If you want a Parson/Jack, let me know I do work with there rescue group.

Most breeds large or small could be a good agility dog. The difference is if you want to do it for fun, or if you want to do it for fun and have a desire to be competitive as a team as well.
Pretty much every possible breed could do agility. I've seen some very large breeds excel at it that are quite amazing. There's a local bullmastiff and a local giant schnauzer that both are very good and competitive. Doesn't mean everyone's will be though.
Part of it is your ambition and drive and want to train and keep it upbeat too.
