They way things are right now, even well broke horses are selling for peanuts.
My advice to you: Since you say you love the horse to death, Have an experienced horseperson over to evaluate the mare, & take some lessons.

We did something similar in Vegas quite a few years ago at the Excaliber Hotel/Casino. It was really fun!

I don't have any breed suggestions, but my dog and your dogs look an awful lot alike.(From what I can tell on your avatar anyway) People tell me she looks like an Aussie Mix or a Catahoula Mix all the time.
Pepper also came from a humane...

Thats what I'm afraid will happen if I try it with Pepper. Something off the wall would come up, and I still wouldn't know what she is.
Hopefully they will get better at it as they ID more breeds.
