I noticed that some breeders advertise their puppies as being "double bred." Basically, I believe this means that they are breeding a mother/son or father/daughter to produce their pups. I would assume that this would have disasterous results genet...

I believe that poodles are prone to skin problems. Check out the internet and see if you can find anything on that.

I don't know much about your dog's scratching problem, but if I was you I would report this breeder to the ASPCA. That kind of breeding is unethical.

Yes you are alpha, but you can't expect an 8 week old puppy to hold his bladder thru the night. That's just not physically possible for them.
