Actual guarding breeds are a lot of work, many require a lot of excercise and aren't recommended for first time dog owners. I would suggest going to the shelter and finding a medium/large black mixed breed. Black dogs are less likely to get adopted...

I've never been around a quiet Chi! Maybe the longcoats tend to be quieter, IDK? Unless the dog is lethargic or acting strangly, I'd be happy w/ a quiet dog. My Rottie hardly barks at all and it's so nice compared to the neighbors' Labs.

If he's two, or older, and still that small, I seriously doubt he is a Lab mix. I can see Heeler and maybe JRT or some other smooth coated terrier.
