I dont keep up with this kind of thing but my guess is she got put in was bailed out and then the judge put her back in.
When you go to jail they set a bail, if someone wants to they can pay for you to be out of jail untill court, if you show up to court they get there money back and then the judge can decide if they want to let you off, fine you, or put you in jail. If you dont show no one gets there money back and a warrent is put out for your arrest.

She was already convicted. They let her out because of "medical" problems. The sheriff let her out, shes back in jail because the judge makes the final decision. The judge felt that she should serve her entire sentence.
I'm not sure it has to do with it just being Paris Hilton, as much as it begs the question, do celebrities (regardless of which celebrity it is) get special treatment when they break the laws the rest of us do? And why should they be treated any differently than the average Joe. Or Jane.
